Potato Soup
(from 4-H cook book)
3 Medium Potatoes - cubed
2 cups of water
1 small onion - finely chopped
3 TBSP butter
3 TBSP flour
1/2 tsp flour
3 cups milk
1 cup shredded cheddar cheese
1 cup cubed ham
red/black pepper to taste
Cook potatoes in 2 cups of water until tender. Reserved 1 cup of cooking liquid and set aside. Drain potatoes. Melt butter and cook onion until tender. Add flour and cook 2 to 3 minutes. Add potatoes, followed by cooking liquid, milk and sugar. Stir, then add cheese and ham. Simmer 30 minutes, stirring frequently.
Its super easy, and smells good, though I haven't had it, I am making it for my friend who had a baby. It's her dinner. But I took a taste and it's awesome!
