Menu Plan Monday

Greeting and salutations!

I hope you all are doing well. Got my menu plan all figured out for this week! You excited? I am! Oh and I will have a recipe at the end of this for one of my FAVORITE meals!

Monday: Pierogi Beef Skillet

Tuesday: Grilled Cheese, Tomato Basil Soup

Wednesday: Orange Chicken over Rice, Sauteed Zucchini & Squash

Thursday: Ham Steaks, Green Bean Italiano

Friday: Mashed Potato Casserole, Cheesy Veggies

Saturday: Left overs or Pizza (but probably leftovers)

Sunday: Spinach and Tomato Stuffed Chicken Breasts, Rice and veggies


And a recipe. Now before you read the title let me tell you this...it sounds different - BUT It is darn delicious. I first had this recipe when Drew and I were dating. I remember when he first told me about it I thought - oh heck no, but it doesn't turn out the way you think!

Cottage Beef Bake


Ingredients


1.5 cups uncooked elbow macaroni
2 cups cottage cheese (I prefer reduced fat, small curd)
1/2. cup onion chopped
2 TBSP. butter
1 lb. lean ground beef (we use ground turkey most of the time)
1 tsp. salt (I omit this)
1. TBSP. flour
2 tsp. italian seasoning
8 ozs. tomato sauce
2 cups shredded American Cheese. (or cheddar is another good one!)
buttered bread crumbs

1) Preheat oven to 325

2) Cook macaroni according to package directions; drain well. Combine with cottage cheese; set aside. Saute onion in better until transparent. Add ground beef and cook until lightly browned. Stir in salt, flour, Italian seasoning, and tomato sauce. Cook for one minute.

3) Pour 1/3 of meat mixture into buttered 2 qt. casserole dish. Top with 1/2 macaroni mixture and then 1/2 of shredded cheese. Repeat layers, using last 1/3 of the sauce on top. Sprinkle buttered bread crumbs over top. Bake, uncovered,  for 45 minutes.

So, I was vegetarian in high school, and my mom used to make this thing we called "cottage cheese loaf" that turns out kind of like a vegetarian meatloaf. Most people get turned off by the name, but if you are already cooking with cottage cheese, you might want to give it a try. I LOVE it! I haven't figured out the nutrition facts, but I bet it's a pretty healthy alternative.
