Ok so here goes - but I am gonna be honest...I feel bored with out menu!
Special Treat: Homemade Granola Bars!
Monday: Corn Dog Muffins, Pasta Salad, and Asparagus
Tuesday: Fruit Fish Packets, Scalloped Potatoes, Veggie
Wednesday: Sloppy Joes, Fries
Thursday: Mexican Lasagna, Spanish Rice, Rolls
Friday: Leftovers/ Mac & Cheese
Saturday: Spaghetti & Garlic Toast
Sunday: Hamburgers & Sweet Potato Fries
I normally don't do a recipe - but I am gonna start!
Fruity Fish Fillet Packets
Serves 2
Two 6 oz fillets raw tilapia, cod or any mild white fish
1/2 cup pineapple or mango salsa
1/z cup slices red onion
Preheat oven to 375
Lay a large piece of heavy-duty foil on a baking sheet and spray with nonstick spray. Place the fish fillets side by side in the center. Top fish evenly with salsa and onion.
Fold and seal together the top and bottom edges of the foil, and then the side edges to create a well-sealed packet. Place baking sheet in the oven and bake for about 15 minutes, until fish is cooked through.
Allow packet to cool for a few minutes, and then cut to release steam before opening it entirely.
